Matcha Crepes

Delicious and healthy recipe packed with nutritional benefits

Ingredients for 5 pieces

2 tbsp chia
220 ml of water

1 tbsp coconut oil, neutral
50 g soy yogurt
1 tsp apple cider vinegar
50 ml of plant-based milk
150 g spelt flour
1 tsp matcha powder
1 tbsp coconut sugar
1 pinch of salt
some neutral oil for frying

Topping:
Coconut sugar
Fruit as desired

Soak chia seeds in 230 ml water for 5 minutes. Mix coconut oil with soy yogurt, apple cider vinegar and milk. Let stand for 1 minute. Separately mix spelt flour, matcha, coconut sugar and salt. Now add the chia, the milk mixture and the flour mixture and stir into a smooth dough. Heat a pan with neutral oil. With a spoon, place a little dough in the middle. Spread thinly in the pan. Bake for about 3-4 minutes per side over medium heat, then flip carefully. Top with coconut sugar (and fruit) and serve.
