Vegan Monster Cookies

Happy Halloween!

Ingredients for 10 cookies:

1 tbsp chia
60 ml  water

115 g vegan butter, soft
125 g coconut blossom sugar
1/2 tsp vanilla

Dry ingredients:
220 g spelt flour
20 g cocoa
1/2 tsp baking powder
1/2 tsp baking soda
1 pinch of salt

100g vegan dark chocolate drops
80 g white, vegan chocolate
50 g dark, vegan chocolate

Preheat the oven to 175 degrees top/bottom heat. Mix the chia seeds and the water in a glass and let soak for 5 minutes. Blend the butter and sugar with the mixer for 2 minutes until creamy and mix with the swollen chia egg and the vanilla. Mix the dry ingredients in a bowl and work with the butter mixture to form a smooth dough. Add in the chocolate drops. Place the dough in a biscuit shape on a baking sheet lined with baking paper. The dough is ideal for 10 monster cookies of the same size! Bake for about 15 minutes. Meanwhile, let the white and dark chocolate melt separately in a water bath. Use the white chocolate to drip slightly larger drops onto baking paper. Put an even smaller drop of the dark chocolate in the center of the drop so that eyes appear. Let it cool down, preferably in the refrigerator. Decorate cookies with the rest of the chocolate and finally place the eyes in the middle. Have fun!
